Biographical Note

Ellis J. Bourgeois was the assessor of St. James Parish for twenty years. After working as a sugar boiler at the Webre-Steib Plantation sugar mill in Vacherie, he began managing his uncle's restaurant, the Service Inn, in 1946. In 1949, Bourgeois purchased the restaurant, which also operated a barber shop and became a stopover for Louisiana politicians including the late U.S. Sen. Allen J. Ellender. Bourgeois was a member of the Louisiana Assessor's Association, Knights of Columbus Council, Lions Club, St. James Boat Club, Council on Aging, Martin Luther King Scholarship Foundation, and the St. James Historical Society.
